The Perfect Brew

Start with fresh cold water.
Never use water from the hot tap or water that has already boiled. Bottled or filtered water is recommended when old plumbing imparts an unpleasant flavour, or in areas with heavily chlorinated or hard water.

Water temperature is important with the best brewing temperature being between 90-95 degrees Celsius. This can be reached by letting your kettle rest for a few moments after boiling. If the water is too hot, the coffee will be scalded and become bitter; if the water is too cold, it won't extract all the flavour leaving you with a watery brew. While we're talking about temperature, don't forget to pre-heat the pot, pour hot water into the empty vessel to warm it, and then empty before brewing.

Use the correct grind.

Coffee should be ground to the correct consistency. The grind of coffee varies depending on the brewing method you are using, for example an espresso grind is much finer than a plunger grind. When grinding your own beans consult your grinder’s instruction manual for the correct settings. For the best cup of Monjava coffee, use an espresso machine. An espresso machine is the best method of extracting all the potential flavour from your coffee. What ever equipment you chose to use, it needs to be cleaned properly after use and in proper working order.

Avoid over-extraction
When water comes in contact with coffee grounds for too long, it can produce a bitter flavour. Conversely, when the water is passed through the coffee too quickly, you get a coffee that lacks flavour. The correct proportions grind and brewing time will help achieve a full flavour. A good cup of coffee should deliver a robust, but not bitter, taste.

Drink your coffee while it's fresh!
Coffee should be consumed directly after making it you can keep coffee warm on a hotplate or stovetop for an absolute maximum of 20 minutes before its flavour starts to become rancid. Reheating coffee is even worse. An airtight thermos preserves flavour for several hours if you filter the coffee first. But even filtered coffee will develop a thermos taste. Brew it fresh instead for small effort and a big reward.
